sweet potato fries |
I never forget the real taste of sweet potato fries that my mom cooked. She was the real chef of our house. My dad always used to appreciate the dishes.
Sweet Potatoes
·
2 large sweet potatoes (1 pound)
·
2 teaspoons canola oil
·
½ teaspoon chili powder
·
⅛ teaspoon salt
Sauce
·
¾ cup plain low-fat Greek yogurt
·
teaspoon grated lime zest
·
tablespoon lime juice
·
½ – 1 teaspoon minced canned chipotle peppers in
adobo sauce
·
½ teaspoon honey
·
⅛ teaspoon ground cumin
1. To create the sweet potatoes,
heat up the oven to 400ºF. Spray an oversized rimmed baking sheet with cookery
spray.
2. Peel the sweet potatoes and
divide them lengthwise. Cut every 1/2 lengthwise into four wedges. Place the
wedges in a giant bowl; drizzle with the oil, sprinkle with the chili powder
and salt, and toss to coat equally.
3. Place the wedges cut side down
in a single layer on the baking sheet. Bake till the bottoms are browned,
eighteen to twenty minutes. Flip the wedges to the other cut sides and bake
till browned, about eight minutes longer.
4. Meanwhile, to create the
sauce, stir along the yoghurt, lime zest and juice, chipotle, honey, cumin, and
salt in a little bowl. Serve the “Sweet
Potato Fries” with the sauce.
